Recipe: Creamy Chicken Mushroom Spinach Herb Pasta (with veg option)

This creamy pasta dish simple and cheap to make and is ideal for beginners hoping to woo their partners with their cooking skills. Suitable for both vegos and carnivores :)

(Serves four)

Ingredients

  • 500 gms angel hair or linguini pasta
  • 1 lemon
  • 4 cups sliced brown mushrooms
  • 3 cups baby spinach
  • 1 cup cream
  • 1/2 cup fresh parsley chopped
  • 1/2 cup fresh basil chopped
  • 3tbs butter
  • ½ cup shredded parmesan cheese
  • 4 chicken breasts (optional*)

Steps

  1. Bring a large pot of lightly salted water to a boil. Add linguini and cook until tender. Drain.
  2. Meanwhile, heat butter in a medium pot over low-med heat. Add mushrooms; cook and stir until tender. Add chopped parsley, basil and pepper.
  3. Pour in cream and stir. Cook for 2 minutes.
  4. Add baby spinach and stir until wilted.
  5. Toss in pasta into sauce
  6. Serve immediately
  7. Garnish each serve with parmesan cheese and a quarter lemon slice

*For Strict Carnivores: slice chicken breasts into thin strips.  Fry in olive oil, lemon pepper and minced garlic until cooked.  Serve chicken on top of pasta.

Vegetarian tip: For vegetarians that are fans of mock meat; fry 4 Sanitarium Tender Schnitzels until crispy. Cut into strips and serve on top of pasta.
